Quinoa Chicken Salad: INGREDIENTS

Dried oregano1 tsp
Cumin powder½ tsp
Paprika powder1 tsp
Lemon juice2 tbsp
Chicken (boneless cubes)250g
Garlic (crushed)1 tsp
Fresh coriander (chopped)2 tbsp
Mint leaves (chopped)1 tbsp
Grated and squeezed cucumber1
Mustard paste½ tbsp
Apple cider vinegar1 tbsp
Dried basil½ tsp
Cucumber (cubes)1 cup
Black olives (sliced)¼ cup
Tomatoes (cubes)3 medium
Onion (cubes)1 medium
Feta cheese (crumbled)¼ cup
Here’s a step-by-step guide for making your Quinoa Chicken Salad:

Cook Quinoa: Rinse 1 cup of quinoa under cold water. In a pot, add the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes until quinoa is tender and water is absorbed. Remove from heat and let it cool.

Marinate Chicken: In a bowl, mix boneless chicken cubes with 1 tablespoon of olive oil (extra virgin), crushed garlic (1 tsp), lemon juice (2 tbs), cumin powder (½ tsp), paprika powder (1 tsp), dried oregano (1 tsp), salt (1 tsp or to taste), and crushed black pepper (1 tsp). Let it marinate for at least 15 minutes.
