Quinoa Chicken Salad: INGREDIENTS

Chicken (boneless cubes) | 250g |
Yoghurt | 250g |
Garlic (crushed) | 1 tsp |
Fresh coriander (chopped) | 2 tbsp |
Mint leaves (chopped) | 1 tbsp |
Grated and squeezed cucumber | 1 |
Mustard paste | ½ tbsp |
Apple cider vinegar | 1 tbsp |
Dried basil | ½ tsp |
Cucumber (cubes) | 1 cup |
Black olives (sliced) | ¼ cup |
Tomatoes (cubes) | 3 medium |
Onion (cubes) | 1 medium |

Cook Quinoa: Rinse 1 cup of quinoa under cold water. In a pot, add the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes until quinoa is tender and water is absorbed. Remove from heat and let it cool.
